Chicken and Lentil Soup

Ingredients

  • 1 cup lentil beans
  • 1 lbs chicken breast, w/o skin
  • 1 cup yellow onion, chopped
  • 1 bay leaf
  • 1 cup chopped carrots
  • 1 garlic clove
  • 1/4 tsp table salt
  • 1/4 tsp black pepper

Instructions

Please note: This recipe requires 8-10 hours in crockpot which is not reflected in the prep time.
Combine lentils, chicken (diced), onion, bay leaf, carrots, garlic (minced) and spices with 2 quarts water in crockpot.
Cook on low, covered, 8 to 10 hours.
Yield: 8 weight-loss-friendly or 6 standard servings.
TIPS:
Refrain from drinking during meals. It is best to stop taking in liquids at least 30 minutes before and after each meal. This will allow you to consume adequate amounts of food/protein before getting full. Stop eating at the first sign of fullness.
