- 1 tbsp Mayonnaise, fat free
- 1 tsp dijon mustard
- 1 tbsp chopped onion
- 1 pc looseleaf lettuce
- 1/2 tomato
Dice cooked chicken and place in a small mixing bowl; stir in mayonnaise and mustard.
Dice onion finely and add to chicken mixture, mixing thoroughly to combine.
Place lettuce leaf onto serving plate; top with chicken salad and garnish with tomato slices.
