Mozzarella and Tomato Salad

Ingredients

  • 2 tomatoes
  • 4 fresh basil basil
  • 1 garlic clove
  • 2 cup mixed greens
  • 2 tbsp olive oil, olive
  • 2 tbsp balsamic vinegar
  • 1/8 tsp black pepper
  • 1/2 cup shredded mozzarella cheese

Instructions

Wash tomatoes and cut into 1/4-inch slices. Wash and chop basil leaves. Peel and mince garlic. Wash and drain mixed greens and place 1/2 cup on each of 4 serving plates. In a small bowl, combine minced garlic, olive oil, vinegar, 2 teaspoons of water, and black pepper. Top each salad with 2 tablespoons cheese and equally divided tomatoes. Sprinkle with chopped basil. Drizzle with equally divided vinaigrette. Yield: 4 weight-loss-friendly or standard servings.
TIPS:
Pair this entrée with a high protein side dish or snack (later). Stop eating at the first sign of fullness.
