Nicoise Salad

Ingredients

  • 2 cups fresh romaine lettuce, chopped
  • 8 oz tuna fish, 12.5oz can
  • 2 baked potatoes, w/skin
  • 1 cup green beans
  • 8 black olives, black, w/o pits
  • 2 tomatoes
  • 1/4 cup balsamic vinegar
  • 1/4 tsp black pepper

Instructions

Place lettuce in a large salad bowl. Top with tuna, sliced potatoes, green beans, olives and tomatoes. Cover and refrigerate until ready to serve. Serve salad with balsamic vinegar and black pepper on top. Yield: 4 weight-loss-friendly or standard servings.
TIPS:
Eat fish at least twice a week. Engage in mindful eating to ensure that you are chewing each bite well, taking eraser-sized bites and eating (and drinking) slowly.
