2 large round slices watermelon about 1 inch thick
3/4 cup Low fat or fat free plain greek yogurt
1 teaspoon honey
1 tsp vanilla extra
1 cup fresh strawberries, sliced
1 cup fresh blackberries, sliced in half
(You may use fresh blueberries if blackberries are unavailable. You can also use bananas or raspberries with, or instead, of strawberries)
Handful of fresh mint leaves, rough chopped, optional
1. Combine yogurt, honey and vanilla in a bowl, mix well.
2. Divide yogurt in half, and spread equal amounts on each watermelon round
3. Decorate each watermelon round with berries and sprinkle with mint leaves, if using.
4. Cut into each watermelon round into 8 slices and serve!
