Greek Chicken Salad

Ingredients

  • 3 cups romaine lettuce
  • 1/2 cup pared cucumber, w/o skin
  • 1/4 cup chopped onion
  • 12 oz chicken breast w/o skin
  • 1 cup lentil beans
  • 2 tbsp lemon juice
  • 1 tsp olive oil
  • 1 tbsp red wine vinegar
  • 1/4 tsp black pepper
  • 1/4 cup oregano
  • 1 tsp spearmint spice

Instructions

Toss lettuce, cucumbers and onions in large salad bowl. Top with chicken and lentils. Refrigerate until ready to serve. Toss with lemon juice, oil, vinegar and seasonings at service time. Yield: 6 weight-loss-friendly or 3 standard servings (double the nutritional value).

TIPS:
Refrain from drinking during meals. It is best to stop taking in liquids at least 30 minutes before and after each meal. This will allow you to consume adequate amounts of food/protein before getting full. Engage in mindful eating to ensure that you are chewing each bite well, taking eraser-sized bites and eating (and drinking) slowly.
