Curried Chicken Salad


  • 1/2 cup waterchestnuts, slices, 1 cup pineapple, tidbits, w/juice, not drained
  • 2 cup chicken breast without skin, 1/8 cup onion
  • 1/4 cup mayonnaise, light, 1 tbsp lemon juice, 1 tsp Curry, 1/4 tsp salt


Chop waterchestnuts and pineapple into small pieces.
Combine with the chicken and green onions a large bowl.
Combine mayonnaise, lemon juice, curry powder and salt in a small bowl.
Toss dressing with chicken mixture, stirring gently until mixed evenly.
Serve on lettuce leaves or in a lettuce lined salad bowl.
Yield 6 weight-loss-friendly ot standard serving.

For the band-friendly servings, make sure the pineapple is cut it into small pieces and chew thoroughly to improve tolerance.
Pair this entrée with a high protein side dish or snack (later).
